After lighting up Paris, Marseille, Lyon and Lille, Nouvelle Garde now takes on another stronghold of French gastronomy: Bordeaux. On Place Saint-Christoly, between golden stone façades, echoes of nearby wine estates, and the well-honed codes of the Parisian brasserie, emerges Brasserie Vinatier. At its heart stands a wood-fired hearth, where meats, fish and vegetables serve as proud guardians of the brasserie’s sacred flame.

That's our motto. We'll never have tomatoes on our plates in the middle of the winter. We cook everything with the freshest produce, and our menus constantly evolve with the seasons.

We're fighting to save our French gastronomic heritage, so wherever possible we source almost all our products locally and regionally.
FARM TO TABLE
We deal directly with a wide range of producers, not only for our cooking matters but also when it comes to wines for our cellars. For instance, our fries and mashed potato are made from potatoes grown in the Baie de Somme, and our mixed greens come from Seine-et-Marne.
Eating and drinking the French way
With the soul of a modern-day wine estate, Nouvelle Garde’s first brasserie in the South-West proudly holds on to its Parisian roots while drawing from its new Bordeaux playground to write a fresh story.
At the heart of it all? A fireplace — raw and radiant, burning with a single mission: to feed you with its wood-fired flames.
Here, almost everything meets the fire: duck, ribeye, pork or andouillette kissed by the embers, alongside a line-up of finely tuned specialties — gougères with aged mimolette, oysters with txistorra, mussels in beurre blanc and lacto-fermented chili, a traditional cassoulet, crêpe Suzette, and even a legendary house-made canelé.
And to raise a glass, the wine list celebrates the jewels of our terroir. Bordeaux flows freely, and for the true enthusiasts, a proud selection of grands vins awaits.
